The book was very informative and answered all my questions about how to use coconut four and why.
Maybe I just don’t like the texture of the coconut flour in general. If one can get past that texture, then the recipes are probably great. Good luck with coconut flour use. (for low carb eating, I prefer carbalose flour)

This book is easy to follow, informative, the recipes are delicious and simpler to use than most Wheat Free/Gluten Free recipe books I’ve seen. Coconut flour in cooking does not require all that extra flour(s) that you normally need. Love the high fiber aspect of coconut flour. I especially loved the pancakes recipes–even the kids loved it which I guess is the ultimate test in most cases! Look for his other books too!
I haven’t tried many recipes from this book yet but I bought it because I’d had the chocolate coconut clusters and they are super yummy. Being gluten free, I thought this would be a good book to have on the shelf.
A great range of recipes & well written. How terrific to be able to eat baked items again however, it does not list the caloric food values.
